Eggplant is a versatile vegetable that can be baked, fried, grilled, or boiled. Peeling and slightly salting eggplant prior to preparing can help decrease bitterness.

Storage

Store in the refrigerator until ready to use. Eggplant is very delicate despite it’s thick skin and should be utilized in a few days. Wash prior to cutting.
